Ingredients

4 tablespoons plant-based Nuttelex melted

700 grams baby Red Royale potatoes

1 tablespoon finely minced garlic

bunch of fresh rosemary sprigs

sea salt flakes

Directions

1Preheat oven to 200C fan forced. Place cut potatoes in a baking dish or tray lined with baking paper.

2Place two chopsticks parallel on the cutting board and place your baby potato in between the chopsticks. Using a sharp knife and the aid of two chop sticks, cut thin slices into the potatoes about 3/4 way through.

3(The chopsticks help with not cutting right through the potatoes).

4Place the Nuttelex & garlic in the microwave and melt for 10-15 seconds.

5Mix the buttery garlic sauce well then brush potatoes with the mixture. Then top each potato the with rosemary fronts. Sprinkle generously with salt on top.

6Bake for 35 minutes . When ready potatoes should look a little browned on the bottom.

7When potatoes are browned, remove from the oven and sprinkle with some more freshly torn rosemary on top. Spear each potato with a toothpick or bamboo forks for easy serving.

8Ideally serve warm but cold are just as scrumptious.
