Mini Churros with Chunky Raspberry & Blueberry Compote (Vegan)

Although churros originated in Spain and Portugal, these tasty fried sticks of sugar-coated dough are enjoyed the world over. These mini churros are perfect served with a cooling homemade lemonade or iced tea, and the berry-licious compote recipe is sure to become a fave. This recipe makes 20 mini churros (each approx 5 cm long). For double the churros simply double the churro batter. For maximum crispiness, these are best served within 20 minutes of cooking. Or, if serving later, store in a container without the sugar coating and then reheat in the oven, and then roll in the sugar coating before serving.

Pumpkin, Sweet Potato & Coconut Curry (Vegan)

This is a Nuttelex take on a Nigella Lawson recipe from her fab book At My Table (2017)*. It's a super-easy, mild, yet vibrant curry that works equally well as a light summer supper or as part of a larger feast. To make this a more hearty meal simply add 1/2 can cooked chickpeas. Alternatively, for those that are not strictly plant-based,  add your fave protein to the curry paste just before you add the sweet potato & pumpkin.

Spooky Caribbean Pumpkin Soup

Why not go for something tasty and fun for the family this Halloween! This pumpkin soup has a kick and is deceptively filling. You can use any type of pumpkin you have on hand. Also opt for lime rather than a lemon if you like a more gentle tang and adjust the chilli according to your taste. Serve with small warm crunchy rolls or toasted rye bread to soak up the soupy goodness. Serves 4-6. Freezes well.
