A vibrant orange hued treat ideal for Lunar New Year celebrations as the colour orange symbolises luck and good fortune.
1Steam the salted egg yolks for 3 minutes, then mash with a fork to get coarse bits and set aside.
2Sift plain flour, cornflour, baking powder and salt in a mixing bowl and set aside.
3With an electric mixer on medium speed, cream Nuttelex, caster sugar and icing sugar until the mixture turns light and fluffy. Add a few drops of orange colouring, the mashed egg yolks and flour mixture.
4Mix to form clumps of dough. Gather the clumps to form a ball. Wrap the ball in cling wrap and refrigerate for about 1hr or overnight.
5Form dough into about 18-20g balls. Place cloves on top to make mini oranges. Arrange the cookie dough balls about 2 inches apart on a tray lined with baking paper.
6Bake for 20 minutes in a preheated oven at 160°C or until they turn slightly golden brown. Remove from oven, set aside to cool and store in an airtight container.
