Brownie Bake with Berries

The ultimate in #DecadentDesserts this will have everyone drooling! To make this recipe vegan use egg replacer and vegan chocolate. Note this recipe makes 2 x trays, because 1 tray isn't enough!

 

Ingredients

1 kg dark chocolate or vegan dark chocolate

300 g plant based Nuttelex

5 eggs or egg replacer

3/4 cup brown sugar

2 tbsp cocoa powder

1 cup plain flour

pinch salt

1kg g mixed fresh berries (raspberries, blueberries, blackberries)

Tools

2 baking trays 15cm x 26 cm

baking paper

Directions

1Pre-heat the oven 180°C

2Line 2 x 15cm x 26cm brownie trays with baking paper.

3In a large stainless steel bowl, place the chocolate and Nuttelex together.

4Place the bowl over a sauce pan of warm water. Leave to melt stirring occasionally to mix together.

5Make sure the eggs are beaten well in a separate container.

6Sieve all the dry ingredients (cocoa powder, plain flour, sugar and salt) together & set aside.

7Once the chocolate & Nuttelex have melted, add the beaten eggs or egg replacer.

8Mix the eggs or egg replacer really well before folding in the dry ingredients

9Keep folding until the mixture is smooth.

10Pour the brownie mix into the lined brownie tray making sure the top is levelled evenly.

11Bake for 10-15 minutes.

12Cool down completely before removing from the tin- at least 1 hour

13Dust with non-dissolving cocoa powder. Before serving top with mixed berries. Do not refrigerate the brownies. Keep in an airtight container (without the berries)
