Ceasar Salad with Crispy Garlic Croutons (Vegan)

Perfect for summer entertaining or a vegan Christmas buffet. Vegan Ceasar Salad with Crispy Garlic Croutons - created here by @laurenmelissa_baker #VeganSummerClassics.

Ingredients

Salad

1 bunch kale, washed and torn into bite sized pieces

1 head of a romaine lettuce, washed and torn into bite sized pieces

1 avocado, sliced

Sauce

1/2 cup cashews

1/3 cup water

1/2 lemon, juiced

3 tbsp nutritional yeast

1 small garlic clove

1/2 tsp salt

1 pinch pepper

Croutons

300 g baguette bread, cubed

2 tbsp plant based Nuttelex

5 garlic cloves, minced

salt and pepper

Directions

Croutons

1Preheat oven to 180°C fan forced.

2Line a baking tray with greaseproof paper.

3Mix the melted Nuttelex and minced garlic together and stir through the bread cubes.

4Arrange the bread cubes on the lined baking tray so they do not overlap.

5Bake for 15 minutes, stirring half way through to avoid burning.

6Remove from the oven put aside.

Sauce

1While the bread cubes are baking, make the sauce.

2Add all the ingredients into a high-powered blender and blend until smooth.

Salad

1Arrange salad by tossing the kale, romaine lettuce and avocado together.

2Sprinkle the croutons on top of the salad, then drizzle over the sauce.
