Rich, moist and tasty this is gluten and dairy free cake is perfect alternative. Recipe by @laura_hobby_baker.
Method - Chocolate Beetroot Cake
1Pre-heat oven to 180°C.
2Combine all ingredients in a bowl and stir with a spatula (or you can use a stand mixer if you choose to).
3Pour mixture into a lined/greased baking pan bake and bake in oven for around 40 min or until you poke a skewer in & it comes out clean.
Icing
1In a bowl combine 1 cup of Nuttlex with 2 cups of sifted icing sugar a splash of vanilla essence.
2Using an electric hand mixer slowly combine the ingredients, slowly increasing the speed over 2 - 3 minutes, making sure you scrape down the sides until mixture is combined.
3Spread over cooled cake & top with grated chocolate of your choice. Serve with fresh strawberries on the side.
