Tiny star shaped cakes topped with mint and pomegranate. Tasty, cute and perfect party finger food. We've opted for a traditional rich choc cake  here, but any good moist cake or brownie recipes will work well including our vegan brownie recipe.  For more Christmas Finger Food Ideas see our Pinterest Boards

 

Ingredients

2 1/2 cups self raising flour

3 1/4 cup caster sugar

1 tsp bicarb soda

2/3 cup cocoa

155 g plant based Nuttelex

1 cup water

1 tsp vanilla extract

3 eggs or egg replacer

1/2 pomegranate

1 bunch fresh mint leaves

1 cup icing sugar to dust

1/2 star cookie cutter

Directions

1Combine sifted dry ingredients, add Nuttelex, water and vanilla and mix on high speed till creamy. Then add eggs and continue mixing for a few more minutes till super creamy.

2Scoop into two greased and lined prepared cake trays.

3Bake at 170ºC for 40 minutes or until skewer comes out clean.

4Let cool in tins for 30 minutes.

5Turn onto a bench lined with cling film. Cut out star shapes.

6Decorate with sprig of fresh mint, pomegranate seeds and sift icing sugar on star tips.
