Garlic Seafood with Crusty Garlic Bread

A light seafood dish that will be enjoyed all year round.

Ingredients

400-500 g frozen mussels/ fresh mussels (cleaned and de-beard)

400-500 g frozen clams/ fresh clams (cleaned)

4-6 slices of bread (remove crusts)

1 tbsp chopped garlic

10 g plant based Nuttelex butter (50g Nuttelex if not toasting garlic bread)

50 g plain/ all purpose flour

500 ml chicken stock

170 g cream / fave dairy -free cream

1 corn (cut into pieces)

cayenne pepper

fresh parsley to garnish

Directions

Creamy Garlic Mussels and Clams

1Melt the plant based Nuttelex over medium heat. Add in garlic to sauté. Remove about 4-5 tbsp of garlic flavoured butter. Set aside for the garlic bread.

2 Add in the flour and use a hand whisk to blend the garlic butter and flour into a paste. Gradually stir in chicken stock and cream till well combined. Add in the corn to cook.

3Boil a pot of water with 1 tsp of salt. Add mussels and clams and scald in boiling salted water for about 1 minute. Strain the mussels and clams and transfer into the creamy garlic chicken broth. Give it a stir and cover the pan leaving to cook for about 2 minutes.

4Transfer into a serving dish and sprinkle with cayenne pepper. Garnish with parsley. Serve with crusty garlic bread.

The Garlic Bread

1To make the garlic bread, spread the garlic and plant based Nuttelex prepared earlier onto the bread.

2Toast in the oven on grill mode/airfyer (180°C) till light golden brown and crusty.
