This version of a lemon-lovers family fave is egg free and vegan friendly. #VeganChristmasClassics
1Preheat oven to 180ºC.
1Sift the flour & salt in a bowl, add sugar and grated lemon rind, mixing well.
2Stir in melted Nuttelex, vanilla and milk.
3Place batter into a greased, deep oven proof dish.
1Sprinkle the mixture in the dish with lemon rind and sugar.
2Combine boiling water and lemon juice, and carefully pour the mixture into the oven proof dish.
3Bake for 30 - 40 minutes.
4Stand for 5 - 10 minutes before serving.
5Dust with icing sugar, serve with your favourite yogurt, ice-cream or cream.
