A must for orange marmalade lovers this this sweet n' tangy #PerfectPudding hits the spot when you want a doting dose of comfort food. Note: for more tang use a bittersweet marmalade i.e those with a thick cut rind inside or for those who like it sweet, choose a thin cut marmalade. If you don't need gluten free, simply sub the gluten free flour for self-raising flour.
1Preheat oven to 160C . Grease each ramekin with Nuttelex
2In a small bowl place 3 Tablespoons marmalade with 1 Tablespoon boiling water and mix well to loosen. Then place a Tablespoon of the marmalade mix in each ramekin & set aside.
3In a medium sized bowl place flour, baking powder, sugar, vanilla bean paste, ground cardamom & orange zest.
4Place Nuttelex in a cup and microwave for 20 seconds to melt. Then add the coconut milk and the egg replacer powder and whisk to combine. Add this mixture to the batter above.
5Divide the batter mixture between the 4 ramekins, place on a tray and bake for 30 minutes or until centres spring back.
6When ready to serve run a knife around the edges of each ramekin to loosen and gently unmould/release onto a plate. Then decorate with the dehydrated or fresh orange slices. Serve with vegan cream (or melted vegan ice-cream)
