Matcha Roast Sesame Brittle (Vegan)

This tasty take marries the earthy flavour of matcha powder (green tea) with the sweetness of maple syrup & the nuttiness of roasted black and white sesame seeds

NOTE: If you don't have maple syrup handy, a non vegan version can be made subbing honey for the maple syrup.

Ingredients

2 tsp Nuttelex

150g castor sugar

80g maple syrup

2 tsp matcha powder

1 pinch salt

1 tbsp water

50g roasted white sesame seeds

50g roasted black sesame seeds

1/2 tsp vanilla extract

1/4 baking soda

lined baking tray

cooling rack

Directions

1Combine sugar, maple syrup/honey, matcha powder, water & salt in a small pot. Cook on medium heat and stir until it gradually forms a smooth slurry.

2Add in the roasted black & white sesame, stir constantly for about 5 to 10 minutes. Place a candy thermometer in the mixture, until it reaches about 120-130°C.

3Remove pot from heat and stir in Nuttelex & vanilla extract till melted.

4Add baking soda & combine well. (The mixture will foam up a bit as it reacts with the acid from the caramelisation of the sugar)

5Pour the mixture into a 8 or 9 inch metal tray with a well- lined baking sheet and set aside on a cooling rack.

6Once cooled & hardened, break or slice the sesame slab into bite-sized pieces and serve or place in airtight container.
