Vegan Apple Strudel

Spread the Christmas cheer with this irresistible buttery, flakey, lightly-spiced, apple strudel. Recipe by  @laura_hobby_baker.

NOTE- For the apple detail on top, thinly slice apples and bake in the oven on low at 100C fan forced for 1 hour. Then dust with icing sugar

Ingredients

5 tbsp Plant Based Nuttelex (melted)

3 tbsp sunflower or canola oil

10 sheets of store bought filo pastry

4 small granny smith apple peeled, halved, cored & thinly sliced

1 lemon (juiced)

1 handful raisins or sultanas

1/2 cup breadcrumbs

1 tbsp vanilla sugar

4 tbsp brown sugar

1 tsp ground cinnamon

icing sugar for dusting

Directions

1Preheat oven to 160C (fan forced)

2Firstly prepare the apples then place them in a colander and squeeze lemon juice over them, this is to aid with the oxidisation process (to stop browning)

3In a small bowl place breadcrumbs, sugar, vanilla sugar & cinnamon, mix & set aside

4Starting with the filo pastry sheets, butter each sheet lightly one at a time, gently stacking them on top of one another, until you've built the 10 layers

5Next scatter over the breadcrumb mixture then arrange the apples evenly over the top, then the raisins or sultanas, then bring in sides of the pastry slightly

6Now gently but tightly roll into a log, brushing Nuttelex over all over the outside

7Place on a tray lined with baking paper & bake for 30-40 until golden brown, when its ready allow to cool completely on a wire rack, dust with icing sugar just before serving
