Warm Potato & Chive Salad with Nuttelex Lemon Dressing

Taking your potato salad to the next level, this is a keeper.


For Salad

500 g small new potatoes, scrubbed, halved

1 tbsp Nuttelex (melted)


cracked black pepper

2 cups rocket leaves, washed, patted dry

1 cup parsley, washed, patted dry, finely chopped

1/4 bunch chives, chopped

For Nuttelex Lemon Dressing

60 g Nuttelex

2 garlic cloves, finely chopped

1 tbsp thyme

1 lemon, juiced and zested

1 tsp dijon mustard


For Salad

1Preheat oven to 220C. Line a baking tray with baking paper. Scrub potatoes, slice in half lengthwise.

2Transfer to a large bowl, toss with melted Nuttelex and season with salt and pepper.

3Transfer to a baking tray and bake for around 45 minutes.

4Remove from the oven, allow to cool slightly, serve warm with rocket, parsley, chives and spoon over Nuttelex lemon dressing.

For Nuttelex Lemon Dressing

1Melt Nuttelex in small saucepan over medium heat, then add in garlic, sage and lemon zest. Remove from heat, whisk in mustard and lemon juice, season to taste, then pour dressing over hot roasted potatoes.
